Lynne's Chicken Chili Recipe
1 pound of skinless, boneless chicken breast – diced
1 tablespoon olive oil
¼ cup chopped onion
1 14&1/2 ounce ready cut tomatoes, un-drained
1 13 ounce chicken broth
2 cans cannelloni beans or white northern beans -- drained
1 4 ounce can of diced green chili peppers
½ teaspoon oregano
½ teaspoon coriander
¼ teaspoon ground cumin
3 tablespoons lime juice
dash of pepper
Tortilla chips, light sour cream, grated cheddar cheese
Sauté diced chicken in olive oil over medium heat in a large skillet until cooked thoroughly. Place chicken and remaining ingredients in a crock-pot and cook at the low setting for 8 hours. Garnish with sour cream and cheese and tortilla chips on the side.
