Apple Bran Muffins
Gather your ingredients:
1/2 cup golden raisins (Yes you can use regular raisins. Golden are my favorite.)
3/4 cup whole-wheat flour
3/4 cup all-purpose flour (This is for you or your family members who don't care for the 'all whole wheat taste.'
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup wheat bran or oat bran
1 egg, lightly beaten
1/2 cup low-fat milk
1/2 cup apple butter
1/2 cup packed light brown sugar
1/4 cup canola oil
3 tablespoons molasses
1 cup finely diced peeled apple
Preheat the oven to 375%
Put paper baking cups in your muffing pan or coat with cooking spray.
Put the raisins in a bowl of hot water and cover.
Place the egg, milk, apple butter, brown sugar, oil and molasses in a large bowl and mix until well blended.
Drain the raisins and add them and the diced apple. Stir.
Fill the muffing cups.
Bake about 18 to 22 minutes or until the tops of the muffins spring back when you touch them.
Let them cool in the pan for 5 minutes.
